My family just finished eating this dish. they are in love. My daughter who is not big on eating veggies loved this dish. She said “mom please make this once a week”…thanx you coming up with such a creative twist. It was filling for my husband who is a meat man.

wow I have been browsing your site for awhile now and I just found this recipe for veggie chili’n rice.. I can’t wait to try it as it has all my fav ingredients… Your photography is what keeps drawing me back here… you have a great talent for making a simple banana or egg look like a masterpiece… Keep up the good work. Hope your move went well. we have been remodeling an old house for 20 years… It is never ending…

This recipe tastes even better than it looks!!! We made it for our Hell’s Kitchen Finale party (we increased the jalepenos of course) and it was a HUGE hit.The chips were really fun to make as a group and are a great compliment to the dish. My husband loved them even when the chili was gone. The nice thing was the “meat eaters” didn’t complain about a vegetarian dish and my friend who is on a special protein diet for body building even ate it! It’s rare to please everyone but this dish did! Thanks for sharing it with us!
