
Besides grilled cheese, my favorite sandwich is a BLT. It’s been my favorite sandwich for as long as I can remember and I’m pretty sure it will always be my favorite sandwich. Bacon, lettuce and tomatoes…how can you ever go wrong with that combination?
I think the best BLT is made at home with thick slices of garden fresh tomatoes, thick slices of smoky bacon, and crisp leaves of iceberg lettuce piled high on toasted whole wheat bread that has been slathered with mayo. But judging by the photo and title of this post, I obviously changed things up a bit this time around! I won’t say that this sandwich is better than my traditional BLT, but it was definitely one of the best sandwiches I’ve had in quite some time.
I used homemade focaccia for this sandwich but I’m assuming that you can easily buy the bread at most grocery store bakeries now.

Bacon, Tomato and Blue Cheese on Focaccia
Focaccia, cut to sandwich size, sliced in half crosswise and toasted
Bacon, preferably thick sliced, cooked until crisp but not crunchy
Tomato, sliced
Fresh baby spinach
Blue Cheese spread (recipe below)
Directions: Spread both sides of toasted focaccia with blue cheese. Layer spinach, tomatoes and bacon on one half of the bread. Top with the other half. Enjoy!
Blue Cheese Spread
1 oz. crumbled blue cheese
1 T. mayonnaise
1 T. sour cream
quick squeeze of fresh lemon juice
pinch of onion powder
salt and freshly ground pepper to taste
Directions: Mash the blue cheese with a fork and then stir in all ingredients. Taste and adjust seasonings.

Grilled cheese sandwhiches…mmm, I remember ordering them on out late nights out and dipping them in ketchup! I really never ate them till I met you Nicole, funny!
3:03 pm Jun 28th, 2007Costco sells a Applewood Maple-smoked thick sliced bacon that is EXCELLENT for sandwiches because it has that yummy aroma and is very thick so it doesn’t fall apart. I think that would be an excellent bacon for this delicious looking sandwich.
Nicole your blue cheese spread sounds easy to make. I think I will buy that Cuisinart Mini Prep Plus Processor in your store because that would be handy for sandwich spreads like this one.

Ruby: I think I had that bacon at Jim and Kathy’s house last time I was home. The cuisinart mini prep is really good for hummus and bean dips, too. I use mine more than my full-size food processor.
And I am still totally addicted to grilled cheese sandwiches dipped in ketchup. When Justin’s gone, I eat them several times a week (maybe I shouldn’t admit that on here!). Actually, I’m thinking of making one right now…

Oh yum. I love the sound of the blue cheese spread. I’ve never been a big sandwich eater, but BLTs are one sandwich I just love. Can’t wait to have garden tomatoes.

Bacon & tomatoes - anything else is just a bonus! But I really like the focaccia. I’m not a big fan of sandwiches on toast and bread just doesn’t hold up well under all the tomatoes I load on to it…

Alicia: Well, you could just use mayo or even try a different type of salad dressing!
Kalyn: The spread is pretty much my basic recipe for blue cheese dressing. I don’t make it often because it’s not exactly healthy! But this way, I made just enough for the sandwich and didn’t have any left over to be tempted with later

This sandwich sounds amazing! I’m thinking some fresh arugula in place of the spinach might be a nice peppery change—if you ever feel the need to tweak this cool sandwich, that is.

8:17 am Jul 21st, 2007BLT’s are the ultimate sandwich!! I just had a conversation with my daughter yesterday about how our palate changes as we get older. She is learning to love foods she didn’t as a child and I am coming around on a few foods that I loathed when I was a wee bit younger. Blue Cheese and mushrooms are the latest new foods for me. Love them both!!! Loving being a new food trier!!!
