Beautiful photo!! But what does a Georgia girl do with an acorn squash? I have one now on my counter that came in my local CSA produce.

Elizabeth, I love my acorn and my delicata squash with that mixture! I usually add a can of white beans as well for a little more fill.
The Teacher Cooks, I also love my acorn squash simply sliced, cleaned of seeds, rubbed with olive oil and roasted upside down in 350degree oven for an hour. If I want it a bit sweeter, I will omit the olive oil and in the last 15 minutes flip the squash cut side up and add pad of butter and some brown sugar.
what a great shot of an acorn squash! i love the greens and oranges. it totally captures the feeling of fall, imho.
