A Portable Omelette: Southwest Style Egg Muffins Recipe

One of my many favorites from Kalyn’s Kitchen is her popular recipe for Egg Muffins. Egg muffins aren’t really muffins at all, they are more like mini omelettes baked in muffin cups.  Turning the omelettes into  ‘muffins’ makes them portable and easy to eat on the run.  The great thing about these egg muffins is that they can be made in advance and heated up in the microwave on your way out the door.  Brilliant! Sweet Potato Biscuits with Bacon and Thyme Recipe

Before last night, I had never even tasted a sweet potato biscuit. But they’ve been on my list of new foods to try for a few months now. I’ve been collecting links to sweet potato biscuit recipes and have noticed that there is a pretty wide range of recipes.

Some people make a very sweet biscuit, using lots of mashed sweet potato and sugar.  My husband, who has a major sweet tooth, would love this version from Pots on the Stove. While others seem to prefer just a slightly sweet, buttery version, like these from Orangette. Continue reading →

Chocolate Stout Cupcakes with Vanilla Cream Cheese Frosting

My goodness, my Guinness! These are some awesome cupcakes.

I’ve been wanting to make some type of Guinness Chocolate Cake ever since I first saw these beer cupcakes at Big City, Little Kitchen.  Gena based her cupcakes on a recipe for Guinness Chocolate Cake from Nigella Lawson’s book Feast: Food to Celebrate Life. I don’t have the book so I haven’t seen the original recipe, but I’ve had Gena’s cupcake version bookmarked for a year now. Continue reading →

Vote! Then Eat Some Rosemary Garlic Sweet Potato Fries

If you’re reading this post and you haven’t voted yet, I’d prefer that you bookmark this recipe, go find your local polling place, and come back and read this later.  Really!  Go vote!  And please, if you’re in San Diego, don’t let this silly rain keep you from voting in this historic election.

But when it’s all over and we can relax and (hopefully) breathe a sigh of relief, I want you to make these oven-roasted sweet potato french fries.  I’ve made several versions of these over the years but this batch is by far the best.  As usual, it’s the simplest combination of ingredients that makes me the happiest! Steamed Broccoli with Creamy Cilantro Lemon Dipping Sauce

It’s time to eat your vegetables!

I really haven’t been eating enough veggies lately.  Bacon? Plenty.  Chocolate chip cookies? Oh yeah!  Pizza? Three days worth.  Cinnamon buns? That was our dinner the other night.

Something’s seriously gotta change around here!  Granted, I have been cooking at home a lot lately.  But if I don’t get back to cooking some of my healthier recipes, I’m still gonna end up looking like I’ve been eating at McDonald’s every night! Continue reading →

Simple Yogurt Cake Recipe

This is another photo and recipe left over from our last days in Sicily.  When I made this cake, I was clearing out the pantry in preparation of our move and realized I had a box of cake mix and instant pudding to use up.  Thanks to The Cake Mix Doctor, we ended up with this simple and tasty yogurt cake. Whole Wheat Raspberry Almond Thumbprint Cookies Recipe

Is it really November already?  That means it’s almost been an entire year since we left Sicily!  And it has been an entire year since I participated in NaBloPoMo, or, National Blog Posting Month for those of you not in the know. Continue reading →

Jason’s Ultimate Manwich

The Ultimate Manwich

A sandwich is a sandwich, but a Manwich is a meal!

As I have already mentioned, today I share a birthday with my cousin Jason. A week ago he e-mailed me and requested that I create ‘The Ultimate Manwich’ for his birthday and post it on Pinch My Salt. No other instructions or descriptions were given. He just asked for The Ultimate Manwich. Continue reading →
