Creamed Corn with Bacon and Rosemary

Summer Fest is in full swing and this week we’re celebrating corn, one of summer’s sweetest pleasures.  I have many fond memories of eating fresh corn on the cob in summer – sweet and salty and dripping with butter, it was always a welcome treat.

There’s even a special place in my heart for those funky plastic corn holders (shaped like corn cobs, of course) that my grandma would stick into the ends of the cob to keep our fingers clean and unburnt.  I can still remember how they felt in my hands as I rolled the hot corn against a cold stick of butter until it was was coated with a thick, drippy layer and the stick of butter had molded itself into a shape more suitable for the task at hand. Green Beans with Tart Cherry Balsamic Glaze

Bacon is good.  Bacon with tart cherry balsamic glaze is even better.  The nice thing about this dish is that once you pour this delicious glaze over a pile of healthy green beans, and you don’t even have to feel guilty about the bacon.

Slice of Bacon Quiche

Like many of you out there I have made a serious commitment to eat better and get in shape in 2010.  However, there’s always room for a little indulgence, so I have decided to share this amazing bacon and caramelized onion quiche we ate on New Year’s morning.  Healthy?  Perhaps not.  But there will be times this year when a little splurging is both necessary and deserved.  So hop on your treadmills, bikes, and elliptical machines, drink lots of water, eat lots of vegetables, fruits, and whole grains—but please, I’m begging you, don’t forget to eat a slice of quiche every once in a while. Bacon Brings the World Together

Open BLT

Actually, it’s twitter that brings the world closer together.  And it’s because of twitter that I got invited to eat bacon, lettuce and tomato sandwiches with friends from around the world today.  Virtually, of course.

It all started with a conversation about bacon between Cheryl in New York and Ellise in Paris.  Cheryl had bacon, but no lettuce and tomato.  Ellise had lettuce and tomato, but no bacon.  They joked about getting together for a BLT lunch.  Never one to miss out on a conversation about bacon, I chimed in that I had all the fixings for a BLT and had already planned on making one soon.  Next thing I knew, I had been invited to the virtual BLT Lunch on twitter! Holiday Recipes with a Twist: Sourdough Stuffing with Apples and Bacon

And here we are back to the holiday recipe series! Today we are focusing on one of my favorite parts of a Thanksgiving meal — the stuffing!!  Some people call it stuffing, some people call it dressing, I call it heaven on a plate!  But seriously, my family calls it stuffing regardless of whether it actually gets stuffed into a bird.

This Sourdough Stuffing with Apples and Bacon was not actually stuffed into a turkey, but feel free to do that if you want.  Keep in mind though, you’ll end up with a moister bird if you bake your stuffing/dressing outside the turkey because the breast meat starts to dry out before the stuffing reaches a safe temperature.  That being said, I still have a tendency to stuff a turkey because that’s just the way we’ve always done it in my family.  It just doesn’t feel like Thanksgiving without dry turkey and moist stuffing! B.L.A.T. on Sourdough with Spicy Chipotle Mayonnaise Recipe

Although my favorite sandwich has always been a Bacon, Lettuce and Tomato (BLT), this Bacon, Lettuce, Avocado, and Turkey Sandwich (BLAT). might have just taken over the top spot! I know that B.L.A.T. often stands for Bacon, Lettuce, Avocado, and Tomato, but I didn’t have any good tomatoes!  And since this was my dinner last night, the turkey is what made it more substantial. Sweet Potato Biscuits with Bacon and Thyme Recipe

Before last night, I had never even tasted a sweet potato biscuit. But they’ve been on my list of new foods to try for a few months now. I’ve been collecting links to sweet potato biscuit recipes and have noticed that there is a pretty wide range of recipes.

Some people make a very sweet biscuit, using lots of mashed sweet potato and sugar.  My husband, who has a major sweet tooth, would love this version from Pots on the Stove. While others seem to prefer just a slightly sweet, buttery version, like these from Orangette. Continue reading →
