I had this delicious apple carrot salad with cilantro and feta for lunch today and although I’ve never combined these exact flavors before, I’m really happy that I gave it a try. Several years ago, while finishing college in Eugene and living with my then new (but now ex) in-laws, I ran across a recipe online for a coleslaw with bacon and blue cheese. The finished salad was decorated with cherry tomatoes and called Red, White, and Blue Slaw Salad. I loved the idea of coleslaw with bacon and blue cheese and it turned out to work very well with my standard sweet, tart, and creamy coleslaw dressing. Fall has finally arrived here in California, bringing thunder, rain, and the cooler temperatures I’ve been waiting for. While these cool gray skies have me dreaming of hearty soups and warm baked goods, the theme this week for Fall Fest is fall salads. This is the simplest of salads and a perfect way to usher in the summer that suddenly seems to be in a big hurry to arrive here in Central California. Cucumbers have always been one of my favorite vegetables, so when I saw some beautiful, young Armenian cucumbers at the farmer’s market on Saturday, I couldn’t resist picking up a couple. Today is my friend Ruby’s birthday and since she doesn’t live close enough for me to cook her a birthday meal, I told her she could pick today’s recipe for Pinch My Salt. She chose a curry rice salad with artichokes that she says my mom used to make. I have a vague recollection of the salad, but I think it must have had some ingredients I don’t like because I don’t remember eating much of it. One of my favorite things about winter is fresh-squeezed orange juice. I’ve been lucky in that I’ve spent many years of my life surrounded by orange trees. Growing up in California, we actually never had an orange tree of our own but the thing about living in the San Joaquin Valley is that even if you don’t have an orange tree, you always know several people who do. It’s been several years since I’ve lived in California but now here I am in Sicily, surrounded by orange trees once again, and I’m loving it! Continue reading →
