Summer Fest: 20 Tomato Recipes

It’s tomato season and our garden is producing beautiful red and yellow fruit at an amazing pace, not to mention the zucchini, crookneck squash, peppers, and three varieties of cucumbers that need to be harvested every single day.  Seriously, the cucumbers just don’t stop!  But this week we’re focusing on tomatoes because it’s Wednesday and we’re celebrating this garden favorite for Summer Fest this week.

The picture above is what my kitchen counter currently looks like.  Meanwhile, Phil is out in the garden and will probably be walking in the door with another basket of tomatoes any minute.  Oh, and did I mention that I’m keeping an eye on my Dad’s garden while he’s out of town this week, which means I’m harvesting his tomatoes as well? Needless to say, we’ve been eating lots of tomatoes lately and we’ll probably be eating tomatoes nonstop for the next couple of months.  It’s a nice problem to have.

There have been so many tomato and cucumber salad around here lately that I don’t even want to look at another one until next year (but I’ll change my mind next week and start eating it again).  And I’ve already made one big batch of fresh tomato sauce and one big batch of slow-roasted tomatoes.  Last night I diced up a couple tomatoes while boiling some pasta and then made a super quick sauce with olive oil, garlic, fresh tomatoes, olives, and crushed red chili.  That type of quick pasta with garden veggies is a staple in my kitchen during the warm months. There have also been BLTs, salsas, caprese salads, and all the usual summer standbys.  But last night I decided to look around and see what some of my favorite food bloggers like to do with their fresh tomatoes to help me come up with new ways to enjoy our harvest.  While I was at it, I also looked through the Pinch My Salt archives to see if there were any great fresh tomato recipes that I’ve made in the past and forgotten about, like this Tomato Paella with Chorizo:
