Beautiful & Personally, my favorite squash! Very few bad days cannot be fixed with Acorn Squash stuffed with sausage, onion, brown sugar & bread crumbs :-)
Elizabeth, I love my acorn and my delicata squash with that mixture! I usually add a can of white beans as well for a little more fill.
The Teacher Cooks, I also love my acorn squash simply sliced, cleaned of seeds, rubbed with olive oil and roasted upside down in 350degree oven for an hour. If I want it a bit sweeter, I will omit the olive oil and in the last 15 minutes flip the squash cut side up and add pad of butter and some brown sugar.
