Bacon, Tomato and Blue Cheese on Focaccia

June 28, 2007 by Nicole 21 Comments

Focaccia Sandwich

Besides grilled cheese, my favorite sandwich is a BLT. It’s been my favorite sandwich for as long as I can remember and I’m pretty sure it will always be my favorite sandwich. Bacon, lettuce and tomatoes…how can you ever go wrong with that combination?

I think the best BLT is made at home with thick slices of garden fresh tomatoes, thick slices of smoky bacon, and crisp leaves of iceberg lettuce piled high on toasted whole wheat bread that has been slathered with mayo. But judging by the photo and title of this post, I obviously changed things up a bit this time around! I won’t say that this sandwich is better than my traditional BLT, but it was definitely one of the best sandwiches I’ve had in quite some time.

I used homemade focaccia for this sandwich but I’m assuming that you can easily buy the bread at most grocery store bakeries now.

Grilled cheese sandwhiches...mmm, I remember ordering them on out late nights out and dipping them in ketchup! I really never ate them till I met you Nicole, funny! Costco sells a Applewood Maple-smoked thick sliced bacon that is EXCELLENT for sandwiches because it has that yummy aroma and is very thick so it doesn't fall apart. I think that would be an excellent bacon for this delicious looking sandwich. Nicole your blue cheese spread sounds easy to make. I think I will buy that Cuisinart Mini Prep Plus Processor in your store because that would be handy for sandwich spreads like this one. Great post, thanks! :)

Ruby: I think I had that bacon at Jim and Kathy's house last time I was home. The cuisinart mini prep is really good for hummus and bean dips, too. I use mine more than my full-size food processor. And I am still totally addicted to grilled cheese sandwiches dipped in ketchup. When Justin's gone, I eat them several times a week (maybe I shouldn't admit that on here!). Actually, I'm thinking of making one right now...

Oh yum. I love the sound of the blue cheese spread. I've never been a big sandwich eater, but BLTs are one sandwich I just love. Can't wait to have garden tomatoes.

Bacon & tomatoes - anything else is just a bonus! But I really like the focaccia. I'm not a big fan of sandwiches on toast and bread just doesn't hold up well under all the tomatoes I load on to it... I see this in my future - maybe with basil instead of spinach...'cause I have some!

Kathy: I'll be writing the salad making 101 post even though it isn't exactly winning in the poll! I'm actually surprised that grilled cheese is in the lead! Alicia: Well, you could just use mayo or even try a different type of salad dressing! Kalyn: The spread is pretty much my basic recipe for blue cheese dressing. I don't make it often because it's not exactly healthy! But this way, I made just enough for the sandwich and didn't have any left over to be tempted with later ;-) Patricia: I've always loved the combination of bacon and blue cheese! It's good on burgers too! Katiez: I don't eat many sandwiches on toast but for some reason I always eat my BLTs on toast! But I'm sure you would like using the focaccia even if it isn't toasted! Cynthia: Hahaha...I wish it was low fat! :-)

Blue cheese? Isn't that stuff outlawed in Sicily? It should be. Crazy Central Valley Californians with your blue cheese and your tri-tip.

I came to blue cheese late, but now I love it. Salads with Belgian endive and walnuts were the turning point for me. This sandwich sounds amazing! I'm thinking some fresh arugula in place of the spinach might be a nice peppery change---if you ever feel the need to tweak this cool sandwich, that is.

Georgia: Hope you enjoy it! Peter: Yes, soup would be nice but it's been too hot for it lately! Jason: Well, I could have used gorgonzola, I suppose. But we get Danish blue cheese at the commissary :-) Terry: Walnuts and blue cheese in salads is always a great combination! I'm sure arugula would be great on this sandwich, I just happened to have spinach on hand when I made it ;-)

Hey Nicole, How funny, BLT sandwiches are my favorite as well. I love to make them at home w/reg bacon or turkey bacon. And this one you have made, really looks good. Especially with the switch of bread--almost like a sandwich from Panera deli, but better. :) Loved this post, considering it is one of my most sandwiches. When are you coming to visit?

Peter: I'm going to try some cold soups this summer. It's something I've never made but I've seen some great recipes! Steph: I'm not a big fan of turkey bacon but I guess I've never really given it a chance. I've never been to Panera...Penny talks about it all the time but I don't think they were around before I moved over here. I'll have to try it when I visit this summer. By the way, I'll be in California in August. I'm hoping to make it down south but maybe you guys can also come up and go to the cabin once!

BLT's are the ultimate sandwich!! I just had a conversation with my daughter yesterday about how our palate changes as we get older. She is learning to love foods she didn't as a child and I am coming around on a few foods that I loathed when I was a wee bit younger. Blue Cheese and mushrooms are the latest new foods for me. Love them both!!! Loving being a new food trier!!!

Absolutely the best sandwich in the world. A final killer addition would be to make the sandwich on a crisply toasted English muffin. Vince
