Cream Cheese Filled Banana Muffins

So I tried this experiment yesterday.

There have been a couple of extra ripe bananas staring me down for a couple of days.  I mean, it was getting ugly.  So last night I was forced to make an important decision: bake something or throw the poor things in the freezer where they would probably get lost for a very long time.

I chose to act!  I could have made some banana bread.  Everyone likes banana bread, right?  But lately, I’ve been in the mood for change.  I mean it seems like I’ve been making the same banana bread recipe for at least the last eight years…

Then it struck me!  Muffins!  I’ll make banana muffins!

But then I really thought about it.  Muffins might look different than banana bread, one might even say they come in a much cuter package than banana bread. But when it comes down to it, they’re still banana bread.  Not much change there, huh?

Luckily I had half a package of cream cheese left over from that Pumpkin Cream Cheese Spread I made earlier in the week.  Could I?  Should I?  I wrestled with the decision for a few minutes.  I knew in my heart that bananas and cream cheese were a good combination, but I had never actually tried putting a cream cheese filling in a muffin.  I’ve seen it done before. I’ve tasted good cream cheese-filled muffins.  But I was still worried.

It can be hard to try something for the first time.  Did I have enough experience?  What if I ruined the whole batch?

Oh, what the hell, I just did it!

And you know what?  They were a hit!  I even fed them to a couple of people known to have fairly conservative tastes.  And they loved the change so much, they might never go back to plain old banana bread again.

Cream Cheese Filled Banana Muffins

Cream Cheese Filled Banana Muffins

filling:
4 oz. cream cheese, softened
1/2 cup sugar
1 egg

muffin batter:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
2 bananas, mashed
1/2 cup buttermilk
1/4 cup oil
2 eggs
2 teaspoons vanilla extract

1. Preheat oven to 375 degrees.  Grease a 12-cup standard muffin pan.
2. In a small bowl, beat together cream cheese, sugar, and egg. Put bowl in refrigerator while you make the muffin batter.
3. In a large bowl, whisk together flour, baking powder and soda, salt, and sugar; set aside.
4. In a medium bowl, whisk together bananas, buttermilk, oil, eggs, and vanilla.
5. Pour wet ingredients into the large bowl filled with flour mixture then stir with wooden spoon just until the mixture is combined.
6. Spoon enough batter into muffins cups so that they are just under halfway full.  Add one spoonful of cream cheese mixture into each cup, then top with remaining muffin batter.  Muffin cups will end up being almost completely full.
7. Bake for 20-25 minutes at 375 degrees.  Check after 20 minutes, muffins are done when a toothpick inserted into center comes out clean.
8. Enjoy!

    I just made these... I was afraid I did something wrong because I could not get the cream cheese mix to stop oozing out the sides of the muffin and around the outside of each cup when I was filling the pan... but they turned out just fine. I added some blueberries also. Somehow I got 11 muffins and one muffin cup full of cream cheese mix and blueberries - which was perfect for dessert after baking the muffins this evening ;) Fantastic idea on the muffins!

    I made these last week because I had tasted some cheesecake muffins at a bakery that had some lemon cream cheese filling. But I had some problems with the filling mixture being very watery even after chilling for 2 hours. When I tried to fill the muffins, the cheese mix spread all over, and after baking, the muffins didn't look like they were filled. However, the muffins were very tender because the cream cheese sank into the muffin batter. The muffins still smelled and tasted amazing though! Do you think maybe leaving out the egg would make the cream cheese stay together better?

    Baking right now. After I read the comments, added only half the egg into the cream cheese mixture, still seems a bit loose, but will let you know. Crossing my fingers :)

    I've made these twice now, and I'm having the same problem as Hui Min. The cream cheese mixture is too loose, and when I plop the last bit of batter on top of it, it swallows the batter and oozes up around it to come to the top of the muffin pan. The muffins themselves are good, although they mine are rising more than what it looks like from in the picture. I'm going to try to add less baking powder if I make them again. Also, it would be nice if a size estimate was given on the bananas, or an approximate measurement once mashed. The bananas I buy tend to be on the small side, and the first batch wasn't banana-y enough, so I added three this time.

    I'm trying these tonight and testing it with ganache in the center and one batch with chocolate chips & cream cheese filled-all I have is marscapone cheese instead of cream cheese. They look great Nicole, I'll let ya know how it goes!

    Thank you for posting this! I have used this recipe twice now and just now almost freaked out because I had lost the url address. This time I'll make sure I copy the recipe down. I do agree with another poster though, putting 1/2 the egg in with the cream cheese makes the in-the-muffin icing less runny. Then I just mixed the other 1/2 of the egg in with the batter.

    I made these the other day. Took them to my 80yr. old mom and 84yr. old dad. My brother was visiting. Everyone agreed, they are the best muffins we ever ate! I did reduce the cream cheese filling by almost half, because the first batch was far too overfull.

    made these tonight. they look delicious! i followed the recommendation of other posts and only added 1/2 egg into the cream cheese mixture. even after refrigerating, it was still pretty runny. spooned this into the muffin tins, and it just ran all over the muffin mix. muffins overflowed my tins, but all in all, they came out delicious. just wish the cream cheese filling wouldnt have been so runny. thank you for sharing!

    SOOOOOO good! I experienced the same issue everyone else seems to be having with the cream cheese filling, the muffins and the filling kinda swirled together and went everywhere. They tasted great though, nice and moist, my husband ate three in a row!

    These turned out amazing! I left out the egg altogether from the filling after reading some of the reviews. They taste great! Filling stayed inside the muffin...

    cooking this as we speak, but did a square cake pan instead. Also added a little flour to the cream cheese mixture to make it more solid and less runny! hoping this comes out great.

    Just made half batch with 1bannana and left over cream cheese filling. Perfect! Sprinkled confectioners suge on top to finish
