Buttermilk Blueberry Scones out of the oven

Life has been crazy lately.  The days that I would love to be cooking, baking, and blogging, I am busy with these crazy life things. The days that I have free, I end up sick in bed or busy playing catch up around the house.  You’ve had months like that, right?  Well today I decided to turn things around and give myself the entire day to play around in the kitchen and get inspired again.  When I need a lift, baking is always a great place to start.

My cousin Corinne, who is currently pregnant with a little girl (yippeeee!) had a craving for blueberry scones recently.  She didn’t tell me about it until after the craving had passed, but we decided that it would still be a good idea for me to bake some scones as soon as possible.  As much as I love baking scones, it’s kind of crazy that I’ve never made them with fresh blueberries.  Today I decided to change that.

I adapted this recipe for Buttermilk Cranberry Scones by omitting the cranberries, adding a cup of fresh blueberries, and increasing the liquid a bit to help the blueberries adhere to the batter.  It seemed to work perfectly.  The batter came together well and although a few blueberries did escape and roll across the counter while I was gently folding them in, I managed to catch them before they fell on the floor (much to the disappointment of my Boston Terrier, who happens to love blueberries).  I was so happy with the progress of my scones that I bombarded everyone kept everyone updated with photos via instagram, twitter, and facebook.

I put the scones in the oven and waited patiently for 14 minutes while my whole apartment filled with the scent of buttery baked goods.  I took them out, congratulated myself on what looked to be a perfect batch of buttermilk blueberry scones, and started thinking about mixing up a lemon glaze.  All I needed was lemon juice, powdered sugar… wait.  Sugar?  Sugar!  I forgot to add the sugar when I mixed up the scone dough!  Sigh.  Maybe next time I should concentrate a little more on what I’m making and a little less on sharing photos all over the internet.

So I started out making buttermilk blueberry scones, but instead ended up with a batch of pretty darn good blueberry biscuits instead.  Split open and slathered with butter and pomegranate jelly, I’m perfectly happy with the end result and I’m sure that Phil will be more than happy to devour a few when he gets off work.  But now I’m even more determined to make a batch of buttermilk blueberry scones, slightly sweetened and drizzled with a tart lemon glaze.  Stay tuned!

    I'd still eat 'em! :) Seriously though - I have left cocoa powder out of chocolate cakes (which also called for melted chocolate, so all wasn't totally lost but the texture was off), forgotten sugar ... my 'best' was using black pepper in place of poppyseeds in a batch of muffins. In my defense the jars looked very similar and I was rushing. BUT STILL! Hang in there.

    Nicole - I make significant mistakes all the time when trying to follow exact recipes, but I think your black pepper muffins might have me beat! Thanks for sharing, it put a smile on my face :-)

    See that's a happy accident! Unlike that time I made dinner rolls for Thanksgiving and forgot to add any salt. That was a disaster.

    Mmm...blueberry biscuits sounds just as yummy as blueberry scones. Plus, they're a bit healthier, right? :) How did you like them without the sugar?

    So glad I'm not the only one who messed up like that from time to time!! Good for you to make the most out of it, these sound awesome! As soon as we're out of this heat I'll be making these!     As a die hard scone lover and scone maker -- accidentally making biscuits instead of scones has happened more than once in my kitchen. Thankfully jam fixes this oversight every time.

    Hahaha! I love making scones, and eating them, so when I substituted powdered sugar for the flour, you can imagine what a tragedy it was: no scones, no nothing! And not enough cream to make another batch. sigh.

    It could have been worse. I left the carrots out of carrot cake once. :D I'm loving the idea of fresh berries in scones and just made some with blackberries. Yum!

    I made a batch of chocolate chip scones one time. They looked perfect and the kitchen smelled wonderful when I opened the oven door. However since I had forgotten the salt they were pretty bad and had to be thrown away. Accidents like that happen to us all - keep on baking!

    Must be in the air this week: I was giving my mother-in-law a lesson on using her new ice cream maker with a lovely recipe for vanilla bean ice cream....and when we just couldn't get the taste right, I suddenly realized: sugar!!! Luckily the base was still hot enough to dissolve the forgotten sugar, but still...some lesson!

    They still look good and I'm sure they still tasted great as biscuits, at least! A few years ago I was making chocolate pie, and my brain apparently wasn't working because I used cornMEAL instead of cornSTARCH (random recipe)...when we took the first bite and it tasted gritty....ugh, ugh, ugh. My hubby still ate it, though:)

    Oh man - blueberries make everything better. I spent a few days in Maine this past Spring and they have blueberries in everything! Made for a great visit. Thanks for sharing.
