Coconut Cupcakes with Coconut Cream Cheese Frosting

I’m thrilled to return to Food Blog Friday this week with these amazing Coconut Cupcakes from Simply Recipes. When I needed to make coconut cupcakes for a friend’s bridal shower, I knew exactly which recipe to use.  I’ve made these a few times before, and they’ve always turned out perfect – this time was no exception.

Simply Recipes was started by Elise Bauer in 2003 and for years it mainly featured family recipes that were cooked in her parent’s kitchen.  But you will now find contributions from a handful of other fantastic bloggers on the site as well – this coconut cupcake recipe comes from Garret McCord of Vanilla Garlic.

The cupcakes are moist, light, tender, and full of coconut flavor thanks to the combination of coconut milk and shredded coconut in the recipe.  They are by far the best coconut cupcakes I’ve ever tried.  The only change I made to the recipe was to use cake flour in place of all-purpose –  I used 2 1/2 cups of cake flour to replace the 2 1/4 cups of all-purpose.  I’ve made them with all-purpose flour before and they turned out great, but I do think the cake flour makes them slightly more tender.

I’ve used several of Elise’s recipes over the years and have come to rely on Simply Recipes like a trusted family cookbook.  The recipes are well-written, easy to follow, and printer-friendly.  But the best part is that the recipes really work.  A couple of my other favorites from the site are the Blueberry Muffins and Beef Stroganoff.

    I have recently become addicted to coconut, and I can't turn anything down that contains that ingredient. I will HAVE to make this sometime.

    Elise's recipes have never failed me and I have made QUITE a few! This is one I have bookmarked but haven't made yet. They look fantastic!

    Hi, thanks for this wonderful recipe! I've just baked them and tried the first one and they are ... heavenly! fluffy, moist, very light, they are a dream. I will make them at more occasions in the near future and .. they are so easy to make! I used about 15% less sugar as I don't like things too sweet!

    Oh .. they look YUM. Thanks for sharing such wonderful treasures. I have a question regarding the paper cases. Every time I have baked my cup cakes the paper cases don't remain as beautiful as they were while going into the oven. They end up looking oily once the cup cakes are baked.Is there anything I can do about it.

    Whenever you make cupcakes i want one. they always look amazing. I did the Red velvet one for my hubby for father's day (his fav cake) made his day. Can't wait to make this... sounds yummy-I love coconut anything but esp cake :) Thanks.

    I am in love with this recipe for coconut cupcakes! My daughter is a coconut fanatic and her birthday is coming up soon.. I think I'll have to debut these! I'd like to dye the coconut so it sticks out a little better.. Good Idea! -Amy Elements Papers

    i luv coconut and im in the sixth grade and my birthday is coming up and im bringing cupcakes in and i wanna bring chocolate and cocnut but make them so i hope the students like them cause i always make cupcakes and every one is always asking for another one hope this recipe works out great

    One of my favorite treats after a long day is a nice Sauvignon Blanc and a coconut cupcake! I will have to try this recipe one weekend. I like that it uses coconut milk rather than an extract!! Thanks!

    I tried the receipe. it was GREAT best cupcake I ever ate, my guest also enjoyed them very much!! THANK YOU. Even shared the receipe with my sister in France and she did it and was a total success!!!!
