Lemon Buttermilk Popsicles

I love buttermilk.  I love lemons.  I love really tart, creamy, sweet things.  I also recently received this popsicle maker in the mail and had been trying to decide what to freeze first.  So when I ran across a recipe for these Easy, Creamy, Lemon Dream Popsicles at Whipped, I knew they would be the first ice pops to come out of my freezer.

Whipped is a food blog written by Caroline in Chicago and I’ve been a fan for a few years now.  She has lots of great recipes featuring buttermilk and even created a page listing them all. That’s my kind of food blog.  You might also want to check out her Greek Favorites page – lots of temptation there!

But let me tell you more about these popsicles.  They are a cinch to make and super delicious!  You should probably be a fan of lemon if you are going to make these because they pack some serious lemon punch.  The recipe includes lemon juice and lots of lemon zest so a microplane grater will come in handy.

Lemon Zest

If you think you aren’t a fan of buttermilk, please don’t run from this recipe.  The buttermilk adds a creaminess and tang that complements the lemon perfectly!  Trust me.

Making Lemon Buttermilk Popsicles

If lemon just isn’t your thing or I haven’t convinced you that buttermilk popsicles are the greatest thing ever, you should still go check out Whipped.  Perhaps some classic White Chocolate Macadamia Nut Cookies or a Rhubarb Maple Crisp will tempt you.  I know I’ll be trying the cool, crisp Napa Cabbage Slaw soon – it will be perfect on a hot summer evening.

    Yummmmm, Just made a batch of these popsicles and I will never buy popsicles at the store again. Love!!! the lemon buttermilk combo. Okay the mold...I followed the idea from Bon Appetit, July 2010. I used 3 oz. paper cups, plastic wrap over the opening and a wooden popsicle stick in the middle. Worked like a charm. I am already planning another batch of these and another variety...maybe vanilla yoghurt, fresh cherries and honey... Thanks!

    My adventures with lemons this past weekend consisted of Meyer Lemonade with lavender... not nearly as advanced. I'll have to kick it up a notch as soon as it get s bit hotter.

    I bought a popsicle mold last night, and went right to the grocery store to get lemons and buttermilk. These are great! They are really tart (which I like), but some people may want to use less lemon juice. And if anyone is scared of them tasting too "buttermilky," that's not the case. The only problem I had was with my popsicle mold. When I pulled them out, the stick came out by itself. I just scooped out the popsicle and ate it out of a bowl. Thanks for sharing this great summer recipe!

    These popsicles are wonderful! I saw the recipe, promptly ordered the same popsicle maker you suggested and tried this recipe as my first shot at making homemade popsicles. They were delicious and their shape was beautiful. I was, however, wondering if the recipe filled up all 10 spaces in your popsicle maker. I left plenty of space at the top but still only had enough liquid to fill nine of the 10 spaces.

    These look great - except for the plastic popsicle mold. Is there another option out there? Glass or stainless steel?

    Laurie: It only made 8 popsicles when I did it. Jeff: I'm not sure about popsicle molds made from other matierials - I've only seen plastic. I think the Tovolo brand are BPA-free.

    The Tickle Trunk has AMAZING stainless steel popsicle molds. They are georgous, and such a smart design. I'm off to buy buttermilk and lemons!!

    I have always adored lemon-flavored anything. I am quite intrigued by this recipe, with the addition of buttermilk. I will have to make a batch very soon, while summer is still here.

    Although not a buttermilk fan, I fell in love with lemon buttermilk that is sold in germany. This looks so similar, I'm going to have to try it.
