Mini Cherry Cheesecakes

July 28, 2006 by Nicole 30 Comments

Mini Cherry Cheesecakes

Today I finally decided to try out the mini cheesecake pan that I got on clearance from Crate and Barrel a while back. It came with a recipe, so I decided to start with that before trying anything too fancy. I ended up using a graham cracker crust rather than the one with ground nuts that they suggested.

These were really easy to make and every single one of them turned out perfect (which doesn’t happen too often around here)! Although Crate and Barrel doesn’t seem to be selling the pans anymore, you can now buy them on Amazon. I plan on buying another one soon!

On to the recipe!

Mini Cherry Cheesecakes

For this recipe you will need a mini cheesecake pan.

filling:
1 eight oz. package cream cheese, softened
1 egg
1 t. vanilla
1/4 C. sugar
Crust:
1 C. graham cracker crumbs
2 T. brown sugar
1/3 stick melted butter
Topping: Canned cherry pie filling

1. Preheat oven to 375 degrees.
2. In a medium bowl, mix graham cracker crumbs, sugar and butter with a fork until well combined.
3. Divide crumb mixture evenly between the 12 cups of your mini-cheesecake pan. Using your fingers (if you don’t have long nails!) press crumbs firmly onto the bottom and partially up the sides of each cup; set aside.
4. Using an electric mixer, blend softened cream cheese, egg, vanilla and sugar together in a medium bowl.
5. Spoon cream cheese mixture into each cup (they will only be half filled).
6. Bake for 14 minutes in a preheated 375 degree oven.
7. Remove from oven and place on rack to cool for 20 minutes then carefully remove cheesecakes from pan and let cool completely.
8. Top with cherries and refrigerate until ready to serve.
9. Enjoy!

I am going to try both of these. Made "store bought" sloppy joes a few weeks ago, and they were awful! My husband could eat a whole batch of these, for sure. If you enjoy writing haiku, here is the the group I joined. Seems to be a nice bunch of people, and I haven't run across anyone for your area yet, you would be a nice addition. Here it is-- http://onedeepbreath.blogspot.com/

I clicked through from your pumpkin mini cheesecakes.. I'd somehow missed these. I'm positive that it isn't just that I haven't eaten in way too many hours -- that picture is stunning! I love the texture of the crust, how it's smooth and rough at the same time. The cherries look incredible. I wish I could find the words to describe them!

Ok, Nicole, I don't think I can find graham crackers here. Can you possibly post the ground nuts crust (or email me)? And I don't have a mini cheesecake pan, so I may substitute a muffin pan. :)

CheeseBombs!!! My favorite!! For an extra special taste and presentation sensation, try Black Forest Cheesebombs-- melted dark chocolate drizzled over cherries with a dollop of whipped cream. Mmmmm can taste it now... This is my first visit to your blog, was introduced to it by a thread started on OptiBoard by a friend of yours. You're in my bookmarks now, lady! Fabulous site and the recipes are wonderful. Keep em coming.

I don't usually care for cheesecake, but the sight of these beauties makes me want one *right now *, for breakfast even. Can you make these in mini muffin pans? My kitchen equipment budget is rather depleted at the moment. Thanks!

I know that people do make them in mini muffin pans, but I think you have to use mini cupcake papers or you'd have a hard time getting them out. But I've never tried it, so I'm not sure! But I'm sure you can find a million recipes for the kind made in a mini muffin pan, try using http://foodblogsearch.com
