Curried Turkey Salad with Apples, Cranberries, and Walnuts

I hope you all had a wonderful Thanksgiving!  If you’re lucky, you still have lots of leftover turkey for sandwiches.  This Curried Turkey Salad with Apples, Cranberries, and Walnuts is one of my favorites.

Bacon, Lettuce, Avocado and Turkey Sandwich with Spicy Chipotle Mayonnaise

Another way to spice up your leftover turkey sandwich is to make a Bacon, Lettuce, Avocado, and Turkey Sandwich with Spicy Chipotle Mayonnaise.

If sandwiches aren’t your thing, there are lots of other ways to use leftover turkey.  My mom and grandmother used to always make turkey enchiladas and when I have enough left over, I carry on that tradition.  There’s also turkey soup, turkey pot pie, turkey tetrazzini, or even turkey lasagna.  This morning I saw a recipe for a turkey spaghetti bake over at What’s Gaby Cooking.  Do you have lots of leftovers this year?  What are you making with your leftover turkey?

    Right now, I'm appeasing the stuffing addict by making stuffing packets. I took some stuffing and pressed it onto some parchment, added a layer of cranberry, some turkey, a slice or two of green apple and covered it with a thinner layer of stuffing, sealed it up and baked it.

    Made this yesterday, and it's pretty tasty. Next time I'll leave out the honey...I didn't really care for it, and two tablespoons of curry was a bit spicy, but maybe it's just the particular kind of curry I have. I like this recipe, and now that all my turkey (finally) has been consumed, I'll be using chicken next time.

    When I reheat turkey it tastes old so I like these kinds of sandwich recipes for the leftovers.

    By sheer luck one year, my sister brought us some fresh corn tortillas at Thanksgiving. The next day, I tried a soft corn taco made from leftover turkey, mashed potato, carrot, and cranberry sauce. Now... I can hardly wait for the real meal to be over just so I can make my leftover turkey tacos...
