Artichoke Hummus

Artichoke Hummus

This week I am participating in the second round of Eating Down the Fridge. The challenge was created by Kim O’Donnel of The Washington Post blog A Mighty Appetite.  The goal is to completely avoid food shopping (including eating out) for a full week, and instead concentrate on using what is already stored in your refrigerator, freezer, and pantry.  Because I have been out of town, I started the challenge a couple of days late.  But as of Monday, I have done no food shopping or eating out (with one exception) and I plan on continuing at least through Monday, but perhaps even longer if I can.

Perhaps a week doesn’t sound like a very long time to go without shopping, and for those of us without kids it’s not that long at all.  But my goal for this challenge is to use up things in my freezer and pantry that have long been neglected.  And although I don’t do major grocery shopping more than a few times a month, I am used to popping up to my local market a few times a week for various ingredients, fresh fruits and vegetables.  And quite frankly, I’ve been eating out a lot lately, so eating 21 meals in a row at home will be a bit of a challenge for me! I first tasted this Smoked Tuna Dip at a restaurant in Ft. Walton Beach, Florida. We were there for a military function of some sort and this dip was set out on the appetizer table. Olive Hummus

I love olives. I’ve never met an olive I didn’t like except, perhaps, straight from the tree. Whatever you do, don’t eat an olive straight off the tree! But, I love olives.

I grew up in the middle of California, in olive county. Yes, Spain, Italy and Greece may be known for their bold and flavorful olives but if you’ve ever popped open a can of black olives from the supermarket, chances are it came from California!

I’m sure there are olive snobs out there that turn their noses up at the canned variety. It’s true that they are nothing like ‘real’ olives, but canned olives have their place. On American pizza, for instance. Or Nana’s tamale pie. And when you’re a kid, it’s fun to stick them on the ends of all your fingers and then eat them one by one. Continue reading →

Easy Black Bean Dip with Whole Wheat Pita Chips

Black Bean Dip

Looking for a quick and healthy snack that doesn’t taste quick or healthy? With just a few simple ingredients, you can whip up a restaurant-quality appetizer that you can eat without any guilt. Black beans, one of the world’s healthiest foods, are packed with heart-healthy fiber and cancer-fighting antioxidants. And the best part is that when combined with a whole grain, such as these whole wheat pita chips, beans provide a high quality protein. That’s right, filled with complex carbohydrates and protein, this is a snack that won’t let you down after an hour or two!

This is one of those recipes that I just threw together from ingredients I had on hand. This means, you can do the same. If you don’t have black beans, use whatever canned beans you have in your pantry! Same goes for the spices. Experiment with flavors you like, and if you come up with something great, don’t forget to leave a comment so the rest of us can try it too! Whole wheat pita bread should be pretty easy to find at most grocery stores these days. I like to buy a couple packages and keep it in the freezer. If you can’t find it at your local store, don’t worry! I’ll be posting a recipe for the homemade stuff soon!

Sun-dried Tomato Hummus

Sun-dried Tomato Hummus

6-8 oil-packed sun-dried tomatoes
1 can chickpeas (garbanzo beans), drained and rinsed
1 T. tahini
juice of 1 lemon
4 T. extra virgin olive oil
salt — to taste
fresh ground pepper — to taste
cayenne pepper or crushed red chilies (optional)

Combine everything in a food processor and process until smooth, adjusting the oil to create consistency that you like. The hummus can also be thinned with water. Add salt and pepper to taste and hot pepper if you like things a little spicy.

Good served with toasted pita bread or as a dip with corn chips. This is also really good as a sandwich spread.
