Lemon Buttermilk Popsicles

I love buttermilk.  I love lemons.  I love really tart, creamy, sweet things.  I also recently received this popsicle maker in the mail and had been trying to decide what to freeze first.  So when I ran across a recipe for these Easy, Creamy, Lemon Dream Popsicles at Whipped, I knew they would be the first ice pops to come out of my freezer.

Whipped is a food blog written by Caroline in Chicago and I’ve been a fan for a few years now.  She has lots of great recipes featuring buttermilk and even created a page listing them all. That’s my kind of food blog.  You might also want to check out her Greek Favorites page – lots of temptation there!

But let me tell you more about these popsicles.  They are a cinch to make and super delicious!  You should probably be a fan of lemon if you are going to make these because they pack some serious lemon punch.  The recipe includes lemon juice and lots of lemon zest so a microplane grater will come in handy.

Lemon Zest

If you think you aren’t a fan of buttermilk, please don’t run from this recipe.  The buttermilk adds a creaminess and tang that complements the lemon perfectly!  Trust me.

Making Lemon Buttermilk Popsicles

If lemon just isn’t your thing or I haven’t convinced you that buttermilk popsicles are the greatest thing ever, you should still go check out Whipped.  Perhaps some classic White Chocolate Macadamia Nut Cookies or a Rhubarb Maple Crisp will tempt you.  I know I’ll be trying the cool, crisp Napa Cabbage Slaw soon – it will be perfect on a hot summer evening.

    I just bought a new popsicle maker and was wondering what to do for an inaugural recipe. This is definitely it! Lemon and buttermilk? It doesn't get any better than that.

    Now that looks like something the kids won't like - which makes it worthwhile making! Last lot of lollies I made were very boring with just diluted squash - but they were wolfed down almost instantly. I am tempted to make some of these this weekend, maybe on Sunday evening so they'll be ready on Monday during the day when they are all at school! The look so mouthwateringly good I can't wait!

      eatingRD: I ordered mine from Amazon. If you look up at the first paragraph, you'll see a link to the exact popsicle mold that I ordered. But Amazon has a pretty good selection of different shapes, also. I know many people who have been happy with the Tovolo brand molds. I chose the one that uses wooden sticks so that I can send people out the door with them and not have to worry about getting the plastic pieces back.

    So, are you satisfied with this brand/stylle of popsicle mold? I've been wanting a popsicle mold for a while, but haven't gotten around to buying one. Your input would be appreciated. and the popsicles look very good! the picture really makes you want to reach through the computer screen and grab one. not possible, so one will have to be content to make them. I love buttermilk too! I'm heading over to whipped now to peruse buttermilk recipies. thanks for turning me onto it.

    Hettar7: I've only used it once, but it worked well. The price was good, too! You do have to be careful to make sure the popsicle sticks go in straight otherwise the metal lid is hard to remove. Also, to remove the popsicles, I filled the sink with water and dipped the entire thing in for a few seconds to loosen them. I just removed them all at once then stored them in a plastic bag in the freezer. No problems at all!
